Cauliflower Gratin

Ingredients

1 organic cauliflower and cut into small florets
3 tablespoons butter
1/3 cup all-purpose flour
2 cups milk
Salt and ground pepper to taste
50g Gruyere cheese, grated
2 tablespoons grated Parmesan cheese

a)Preheat oven to 190 degrees Celsius.
b)In a large saucepan, melt butter over medium heat. Add flour and stir until combined. Then whisk in milk and bring to a boil. Constantly stirring to prevent lumping.
c)Season with salt and pepper to taste. Add cauliflower and bring to a boil. Then reduce to a simmer. Cook until the cauliflowers start to soften (5 minutes.) Remove from heat and stir in grated Gruyere.
d)Pour mixture into a baking dish, and sprinkle with breadcrumb and parmesan cheese. Cover with aluminum foil; bake for 20 minutes. Remove foil, and bake until breadcrumbs are golden brown (another 15 to 20 minutes.)
