Celery

Urban myth has it that your body expends more energy eating raw celery than it consumes. True or false, what we know for sure is that the crunchy distinctive stalks are not just good for dipping into bloody mary’s. As a high-yielding vegetable that grows year round, celery comes from the same family as parsley and fennel, and can grow up to 1.5 feet tall.  Celery is fabulous sliced in salads, sautéed in stir fries, and with its distinctive salty flavour, also makes a delicious, nutritious and tasty juice to balance the sweetness of fruit.  A little known fact is that nutrients and fiber are released during the juicing process, making it a safe and delicious source of natural fiber. Celery can also be kept longer than many vegetables when stored correctly. Keep it sealed in a plastic bag or container with a damp cloth in the fridge.
