Known as a summer squash, zucchini (or courgette as it is also known) is similar in appearance to a cucumber but has a slightly fuzzy hair growing on its shiny skin. Usually 6 inches in length and 1-2 inches in diameter, did you know that they can grow up to a metre in length? Zucchinis damage and bruise easily so handle them with care and make sure that you chose one that is firm and free of cuts. Don’t be alarmed if you see zucchinis that are round or different colour – there are several varieties that include golden zucchinis that are deep yellow or orange. While used regularly in raw food as a substitute for pasta and noodles, zucchini is typically served cooked; steamed, boiled, grilled, stuffed, baked, barbequed or fried. When it comes to storage, keep it in a plastic bag in the crisper draw of the fridge and do not wash or wet the skin until you are ready to use it.
